Breach of employment contract

Can I breach a year's contract with an employer if the employer has me doing other work that was not agreed upon in the contract, and not letting me do the work that was agreed on in the contract?

We have employed a contract worker since May 2010 at our company. She is not following her work requirements as per her contract. Her CV stipulates that she has experience, but yet this information does not come accross. Last week she stayed a day away from work, without informing anyone. We had to contact her and only got hold of her at night, which she then claims that she was sick and to embarresed to tell us what was wrong. If she doesnt turn up for work as she is sick, she would say that we can take this as an unpaid leave day.

Please advise what we need to do as everyone has to cover her part of the job while she is still getting paid.
